Paddy Old Irish Whiskey was introduced in 1879 by the Cork Distillery, but at the time was simply known as Cork Distillery Company Old Irish Whiskey. The whiskey would come in time to be renamed in tribute to a sales representative the distillery hired in 1882, Paddy Flaherty.

Paddy travelled from pub to pub and always drew a crowd, for everyone knew that he was generous fellow who would stand you a round. In this way, he made sure everyone got a taste for the Cork Distillery Company Old Irish Whiskey, though most simply came to know it as "Paddy Flaherty’s whiskey" and so the name stuck.
